That's how I ended up creating this tofu egg salad sandwich — and it's honestly become one of my favorite go-to breakfasts! So I just had to share it with you. 💛
So I was making the classic egg salad one morning and realized I had some silken tofu sitting in the fridge. I thought, "Why not try blending the two?" The result? A creamy, slightly tangy, super satisfying spread that tastes just right between two slices of bread. Bonus: it's packed with protein but feels lighter than mayo-heavy versions.
Here's what I used for one sandwich (and you can easily double or triple this!):
• 2 slices of your favorite bread (I like wholegrain or sourdough)
• 1 hard-boiled egg, chopped
• About ⅓ block of silken tofu
• 1 tbsp plain yogurt (or use vegan mayo)
• 1 tsp Dijon mustard
• Salt & black pepper to taste
• A pinch of turmeric (for color and a little boost)
• Chopped chives or green onions (optional but so good!)
• Lettuce or arugula for crunch
It's super easy. Just mash the tofu with a fork in a bowl until smooth. Add the chopped egg, yogurt, mustard, salt, pepper, and turmeric. Stir everything together until it looks like a creamy egg salad. Toast your bread if you like (I always do!), lay down some greens, and pile on the tofu egg mix. Done!
- Add a splash of lemon juice for extra brightness - If you like a bit of heat, sprinkle in some chili flakes - You can skip the egg completely and just double the tofu for a vegan version - It keeps in the fridge for 2 days, so make a bigger batch ahead of time!
This tofu egg salad sandwich has seriously upgraded my breakfast game — it's quick, tasty, and gives me energy without making me feel heavy. I usually make it when I want something healthy but still comforting. 💫
